A white wine in red wine territory

The vines that produce this wine are located in Quintanilla Onesimus (Valladolid), in the heart of Castilla. They are traditionally cultivated in over 20-year-old vines. Vines are mostly Chardonnay grown in La Planta estate, which has very special features: clayey limestone soil over unbroken bedrock within one meter down the surface at an altitude of 900 metres.


Once the optimal maturation point is reached, grapes are hand-picked and stored in 15kg crates. Clusters go straight to the press through a sorting table. Then grapes undergo a light, slow pressing that keeps them fresh. They are naturally decanted overnight and stored in French oak casks for 12 months. Alcoholic fermentation takes place in this new oak with light shakings at the end of the fermentation process. A single transfer after 6 months is made to maintain the wine’s freshness and elegance.
